I know that many recipes say they are quick and easy - until you read the ingredients or it takes 10 minutes rather than 2 minutes to saute each ingredient - but this on really is easy! and it is delicious, taking advantage of the cherry tomatoes and basil which abound this time of year (at the market and even in my terrible garden). We have been eating this once a week. The classic version is served over pasta, but we also use gluten free pasta, or sometimes over arugula or with chicken.
Ingredients: (all of these amount can be adjusted to taste)
- Cherry Tomatoes (about 1 pound, sliced in half long way)
- Basil (2 handfuls, leaves only)
- Garlic - 6 cloves sliced
- Angel hair pasta (1 lb, cooked)
- Salt, Pepper, Olive Oil
Saute garlic in olive oil until soft, add salt and pepper add cherry tomatoes cook until softening, add basil, salt and pepper to taste.
Serve on top of pasta.
Add Wine, Enjoy!
