We are on a gluten free kick.. Many of us are gluten intolerant or celiac and others just find they feel better without it in their diet! We found this recipe on one of our favorite blogs, Nom Nom Paleo, and gave it a try over the holiday weekend. It knocked our socks off! In about thirty minutes we had a meal that tasted like something from an expensive restaurant--much bragging to our families ensued!
What could be easier than placing a filet of white fish (we used cod) on some orange slices with a shiitake ginger vinaigrette?! We followed the directions in the recipe exactly for the vinaigrette. Don't have coconut aminos? Just sub with a gluten free soy sauce--your recipe won't be strict paleo this way, but just as delicious. Wrap everything in some parchment paper, stick it in the oven for 15 minutes, and voila!
